Tim Burton, the first MoMA exhibition to be presented in Toronto in over 20 years. It firmly establishes Tim Burton as one of the most important forces in modern film history.

this exhibit is a must-see for tim burton fans. i know that he started as an animator/illustrator but i didn't know that he's that good. i'm planning to write a tribute to tim burton soon.

notes on my fifth week

- woke up kinda late last sat morning. it's weird considering i was in bed by 10pm. maybe i was just exhausted from work. i took a quick shower and headed to casa loma via subway by noon. if you've been to europe, there's really nothing special with casa loma architecture wise. but i think it's the person and the story behind casa loma make it very interesting and a tourist favorite.

- after casa loma, i had late lunch at arby's yorkdale mall. i think yorkdale mall is the 2nd biggest mall in toronto. i actually like it better than eaton centre (which is the biggest and more popular). i find yorkdale mall classier, better lit, and to have more selection and variety than the eaton centre.

- after the autoshow, i visited the cn tower since it's just right beside mtcc. it's actually my second time. my first time was a long time ago, maybe 5 to 6 years ago. my timing couldn't be more perfect. i went up almost 5 pm, just in time to witness the sunset. i also stayed for a couple of hours to take some pictures of the city at night. when visiting, make sure to get the pass that includes the sky pod. it offers a much better view of toronto than the look out. the ultimate wave tahiti 3d and himalamazon were kinda outdated for me. i've seen better 3d rides.

- we didn't have work last monday since it's family day (an official holiday in canada). my friend alex from the office was kind enough to accompany me to vaughan mills outlet mall for shopping. this outlet mall is very familiar. i think i also shopped here during my first visit to toronto. i'm not really sure. the best shop here is the bass pro shop. being an outdoor person, i think i can easily spend a whole day here.

my first golf shoes

it was a difficult choice.... i was thinking of getting a nike or adidas, but decided last minute to get footjoy instead. i picked functionality over style this time. haha. i do think i got a good deal. it was actualy on sale. i spent only around 112 canadian dollars (including tax) for a 191 originally priced golf shoes. that's at least 70 dollars savings! the salesman at golftown king st toronto was also very convincing. i guess nasales-talk ako. haha. i can't wait to be back in manila to try them out in the fairways.

this is the best autoshow that i've attended. hands down.

ferrari, lamborghini, bentley, rolls royce, porsche, maserati, bmw, mercedes benz, mini, aston martin, jaguar, volvo, audi... you name it... and most probably, it's one of the auto manufacturing companies featured in this grand autoshow. i spent almost four hours oggling and salivating. and that's a lifetime for someone with a short-attention span.

if i get to pick five cars among the hundreds, it would be the following.

book 2: the hunger games

i've been comtemplating for weeks whether to get a nook color or a kindle wifi. after reading reviews, i decided to purchase a kindle. i want something easy on the eyes and with a very long battery life. kindle's e-pearl technology satisfies both - my non-negotiables for an e-book reader. i ordered my kindle online feb 11 and i got it feb 15. by feb 18 i finished my first e-book - the hunger games by suzanne collins.

i work at least 11 hours a day. so if i finished hunger games in three days, it means that it must be really good. hunger games has a lot of cheesy moments but i find them tolerable since the book is well paced and highly entertaining. i hope people stop comparing the hunger games series with twilight. ang layo...

i just started with the second book - catching fire. my guess... i'd be finished by monday. haha.

book 1: the girl who played with fire

the second book of the millenium series is better than the first in my opinion. the pace is faster and it has a very absorbing story that will keep you up all night. this great piece of mystery fiction is a must-read. looking forward to reading the third book. i have a feeling that the last installment could trump this one.

this place is a must-visit for all gretzy fans. the place is surrounded with wayne gretzy memorabilias. it's located at 99 blue jays way, toronto, ontario M5V 9G9.

the beer menu is so so. kinda limited i think. i remember that i ordered an alexander kieths white and a creemore lager for lack of other choices.

but i recommend this place if you're a hockey or a sports fan. like i said, there's lots of hockey memorabilia, and big screen tvs to watch any sporting event.

- finally got to check out the hockey hall of fame. canadians are obsessed with this sport so i need to at least see the stanley cup with my own eyes before i leave this freezer. hehe. i was able to take a lot of pictures especially wayne gretzy memorabilias.

- after visiting hhof, i joined the steam whistle microbrewery 2pm tour and went home with a six-pack and a good buzz.

- st lawrence market reminds me of the salcedo market. had my lunch at busters fish house. i had the buster's cove blue fish and chips. it was more than satisfying or maybe i was just really hungry. i also got to check out the market gallery upstairs. interesting art works but for some reason i got bored. maybe i was just tired from all the walking.

- spent the whole sunday afternoon at the distillery district. it's the cubao expo or the collective of toronto. my favorite place here is the mill street brewery for obvious reasons. hehe.

- there's this chocolate place at the distillery district that i highly recommended for choco lovers. must try is the famous mayan hot chocolate shot. i also went home with a bag of almond clusters (with dark peruvian chocolate, handmade toffee & almonds) and a bar of dark peruvian chocolate (64%). soma chocolate is a place to eat, drink, and worship chocolate.

- i checked out club xs at ritchmond street sat night. my first time to go to a club alone. pathetic. haha. i was not impressed. walang sinabi sa encore or republiq. i enjoyed people watching though. there were a lot of "characters" in that shit hole.

- since the weather was above zero tuesday night, i decided to grab a beer at wayne gretzys restobar. watched the toronto rapters and maple leafs games. here's the results

toronto raptors vs miami heat - heat clobbered raptors 103 - 95. raptors is in desperate need of more quality players. we need another vince carter asap.

toronto maple leafs vs buffalo sabres - exciting game that showcased buffalo sabres goal keeper's world class talent. forgot his name though. haha. i need to do some research. sabres lost 2 - 1 but it could have been 5 - 1 if not for the keeper's tenacity in protecting the goal at all cost.

- i was craving for chicken wings again so i decided to finally have dinner at hooters thursday night since it's just a five minute walk from my hotel. temperature was above zero again so i took advantage of it. i ordered a 10 piece medium breaded chicken wings, with a side order of celery sticks with bleu cheese, and a pint of alexander kieths white beer. yummy. i really did go to hooters for the wings, and i'm not kidding =p

- shopped for bargain books at chapters richmond street. 5 books for 10 bucks. good deal huh?

How Beer Is Made

The Ingredients

The process of brewing beer requires four simple but very important ingredients: malt, hops, water and yeast.

Although all ingredients are key to the brewing process, malt is the most important with respect to weight. The 3 Brewers brewers use barley malt or other specialty malts, depending on the type of beer brewed. The alcohol content of beer is derived from the fermentation of the sugars contained in the malt.

The hop plant is another critical ingredient. Although used in very small quantities, this ingredient is key to developing the beer’s flavor. The distinctive bitter taste of beer comes directly from the essential oils of the hop flower.

Water, also essential to the brewing process, gives beer its liquid property – without water, beer would be nothing more than bread. Special care is taken to filter the water beforehand in order to remove all impurities that could affect the taste.

Yeast is introduced to complete the brewing process. The most common types of yeast are ale yeast (high fermentation) and lager yeast (low fermentation). At The 3 Brewers, ale yeasts are used exclusively in the brewing process.

Brewing Process

The Mashton

At the beginning of the brewing process, a mixture of crushed grains and water forms the mash. At a temperature close to 65 degrees Celsius, the natural enzymes of the malt transforms the starch contained in the malt into more simple sugars, or fermentescibles.

A clear and sweet juice, called the beer wort, is obtained by filtering the mash. The wort is then transferred to the boiling tank, while the leftover solid residue, or slop, will be used as animal feed.


The Boiling Tank

Once in the boiling tank, the beer wort is boiled at high temperatures for sterilization. At the same time hops is added to the brew which begins the process of developing the bitter flavor of the beer. After having reached a temperature of 100 degrees Celsius, the malt treated with hops is cooled and then aromatized further with hop cones as it passes through a special percolator. Yeast is added to the mixture which is then transferred to the fermentation tank.


The Fermentation Tank

The mixture is held for three to five days in the fermentation tank where the yeast transforms the sugars into alcohol, carbon dioxide and esters that give the final product its flavor and aroma. The brew becomes naturally sparkly and at this point is called green beer.


The Holding Tank

For several days the beer rests in hermetic tanks maintained under pressure and at four degrees Celsius. Throughout the holding period the beer gradually becomes more clear and refined and acquires brilliance and fullness.

The final product, a sparkling beer with a velvety foam, can then be drawn directly from the holding tank to your glass ! This is what we call “directly from the brewer to the consumer”.

And now all that is left to do is to appreciate a fine beer… Cheers!

i stayed for two weeks at the marriott eaten centre which is located near dundas square where 3 brewers is situated. the 3 brewers was my favorite bar for quite sometime before i moved to the residence inn. this microbrewery is serious about making quality beer. i never go back to the hotel without a steady beer buzz.

i joined the 30 minute tour of the mill street pub microbrewery at the distillery district last sunday, and got to try these great european style beer at the bar. (the pretzel was also awesome, perfect with beer!)

i also made sure that i don't go home empty handed. i treated myself with a six-pack of more european style beer. i deserve it. i had a crazy week at work.

stock ale - a golden export-stye ale made from only malt and hops, no fillers or adjuncts. the malt's natural sweetness is perfectly balanced by the bitterness derived from the hops.

original organic lager - a pure, refreshing european style beer. batch-crafted from the finest organic ingredients, it takes two to three times longer to brew than ordinary beer. light and crisp, it is cold-aged for 5 smooth weeks, creating a creamy, soft palate with a distinctively clean finish.

mill street porter - a wonderfully sinful blend of balzac's own dark-roasted coffee, brewed to perfection with a full-bodied traditional porter. many are surprised by this delicious and satisfying combination.

lemon tea beer - a remarkable wheat beer infused with a beldn of orange pekoe and earl grey teas. it pours a light amber coulor and will charm you with its sublime tea flavour and subtle lemon twist. a truly canadian take on one of europe's newest beer styles.


so far, i think mill street has the best selection of european style beer in toronto.
i'm already planning for a return trip. hehe.

notes on my third week

- dinner last friday at flip toss thai kitchen. thanks again larryboy. i can never have enough of thai stuff. i ended the night with a nighcap at jack astors at dundas square. i got myself a giant mug of general jack small batch lager as a starter, and an alexander kieth india pale ale as my "one for the road". hehe.

- visited the royal ontarion museum last saturday. my advice is... when visiting ROM, you don't hurry. take your time and relish every single thing it has to offer. i got fascinated with a lot of stuff and shot a million of pictures. i spent around four hours here! my favs are the dinosaur and the mummy collection.

- moved to a new hotel last sunday. i'm now at the residence inn downtown. i think this is a better deal. i now have a living room, a small dining, kitchen, and a bigger bathroom. this hotel is also located in the heart of the entertainment district. i'm surrounded by bars, clubs, and theatres. cn tower, air canada, and roger's centre are just around the corner.

- since my hotel is an 8 minute walk from the subway, i learned to use the PATH to avoid freezing to death. haha. "PATH is downtown toronto's underground walkway linking 28 kilometres of shopping, services and entertainment. just follow the PATH and you'll reach your downtown destination easily in weatherproof comfort."

- i've been craving for chicken wings since last week, and good thing our tuesday team lunch was at this chicken wings place at finch called crazy wings. they were very good, but not "great!".

i recommend the hot and sour shrimp soup and summer rolls as appetizers, the panang or green curry, and spicy eggplant for the main course. unfortunately, i was too full to try out any dessert. when ordering, you can ask them to level up the chili to spice up your dish.

i've noticed that there's a lot of thai food establishments in toronto. maybe becoz thai food goes well with the sub-zero temperature. hehe.

i don't really follow american football but i do watch the superbowl every year. and i have a few absolutely valid reasons. haha.

1) funny expensive commercials - the best this year is the young darth vader by volkswagen. cute and hilarious.

over the years, the superbowl transformed itself into more of a spectacle than just a game. and we love it!

congrats to the greenbay packers for bringing back the lombardi to where it belong.

notes on my second week

- i've already adjusted to the time zone, weather, and the commute to office. i'm so comfortable taking the subway to work that i sometimes snooze. haha.

- thank you tim hortons, timothys, and sometimes second cup, and ofcourse the beatles for keeping me company on my 40 minute train ride every day.

- i'm still gaining inches around my waist. grrrrrr. california thai, carribean queen, subway, pretzelmaker, pumpernickel, fitforlife, teriyaki experience, piazza manna, popeyes, etc. i hate you!!! haha.

- salamat larry boy for the dinner treat last friday at spring rolls. good thai shit. hehe.

- i checked out chinatown and kensington market last saturday. i also had lunch at the kensington cafe. it was a very interesting tour for me. toronto is really a multi-cultural city. i think i can live here if not for the weather.


- i also got to visit AGO (art gallery of ontario). 3 hours well spent. i didn't even notice the time.

- i was tempted to ice skate at the nathan phillips square. it was just too crowded that time so i decided to just people watch. (the old city hall is a work of art. the new city hall is not even comparable).

- tried the beer (amber brew i think) at the 3 brewers. beer served fresh - natural, non-filtered and drawn right from the vessels to my glass!

i admire torres' comments regarding his transfer to chelsea fc. it was brutally honest.

with the addition of this spanish superstar striker, the premiere league and champions league title are within grasp. chelsea's offense in now very potent with drogba, anelka, and torres leading the attack.

thai horror suggestions

two thai shit that i watched recently. when i say shit, i don't mean it in a bad way. i just feel like saying it.

phobia - i watched this film only via youtube. 12 parts i think. i sometimes amaze myself for having this kind of patience. anyway, phobia is forgetable horror film but i'm quite impressed with the quality. maybe it's two notches higher than the quality of philippine horror films in general. but i'm kinda confident that we can catch up. i've heard that the latest installement of the shake rattle and roll franchise was notable.

prang (phobia 2) - stating the obvious, this is the second installment of phobia. same concept. 5 short unrelated stories make up the entire film. but phobia 2 is absolutely an upgrade. it's better in all aspects than it's predecessor. i can say that i was entertained.


why don't you give these two horror films a try... and i suggest you grab some pad thai or curry rice from soms to complete the experience. haha. happy viewing
